Salumiere Kristopher Doll moved to New Orleans after being recruited by local restaurateur Donald Link to open Butcher. After Butcher, Doll decided to stay in New Orleans helping several other well-known chefs open charcuterie programs. At Shank, he will be featuring specialty meats, sandwiches, charcuterie, and cheeses boards.
